Vegetarian Spaghetti and "Meatballs"

Ingredients:

  • 2 servings Zesty Italian Meatless Meatballs
  • 1 serving Tofu Shirataki Noodles
  • 1 teaspoon Canola Vegetable Oil

Directions:

Use the Atkins recipe to make Romesco Sauce for this recipe. Or use a no-sugar-added pasta sauce.
  1. Heat a nonstick skillet with 1 tsp oil over medium heat. Add meatballs and heat till warmed through; about 5 minutes.
  2. Add noodles* and sauce. Sauté for 2 minutes until heated through. Top with Parmesan (optional).
*Use Shirataki soy noodles found in the refrigerated section of health food stores. 1/2 cup serving = 1g NC. Additionally the meatballs should have no more than 4g NC for 6 pieces.
