Vegan Chic Pea Penne Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 2 medium whole (2-3/5" diameter) Red Tomatoes
  • 16 tablespoons Organic Vegenaise
  • 2 tablespoons Vinegar (Cider)
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon Salt
  • 1/2 cup chopped Onions
  • 1/2 teaspoon Celery Seed
  • 1 cup chopped Snowpeas (Pea Pod)
  • 8 ounces Chick Pea Penne Pasta
  • 1/8 teaspoon Black Pepper

Directions:

This vegan dish will be equally appealing to vegetarians and those who eat meat. 
  1. Cook pasta according to package directions. Drain and allow to cool to room temperature.  
  2. Dice the tomato and combine with the cooled pasta, peas and white onion.
  3. Mix together Vegenaise, vinegar, mustard, celery seeds, salt and pepper.
  4. Toss with pasta and vegetable mixture and serve.
