Ingredients:
- 2 medium whole (2-3/5" diameter) Red Tomatoes
- 16 tablespoons Organic Vegenaise
- 2 tablespoons Vinegar (Cider)
- 2 teaspoons Dijon Mustard
- 1 teaspoon Salt
- 1/2 cup chopped Onions
- 1/2 teaspoon Celery Seed
- 1 cup chopped Snowpeas (Pea Pod)
- 8 ounces Chick Pea Penne Pasta
- 1/8 teaspoon Black Pepper
Directions:
This vegan dish will be equally appealing to vegetarians and those who eat meat.
- Cook pasta according to package directions. Drain and allow to cool to room temperature.
- Dice the tomato and combine with the cooled pasta, peas and white onion.
- Mix together Vegenaise, vinegar, mustard, celery seeds, salt and pepper.
- Toss with pasta and vegetable mixture and serve.
