Cooking tip: We tested a variety of recipes using the Ninja Creami machine and found including cream cheese really helps create an ice cream texture, while Atkins shakes provide a wonderful rich flavor. Using this ice cream base, you can switch out the raspberries for your favorite berry, just be sure to adjust the net carbs for accurate tracking.

Ingredients:

  • 1 tablespoon cream cheese
  • 2 tablespoons Magic Baker zero sugar baking blend (Splenda)
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries (123g)
  • 1 Atkins Creamy Vanilla Shake

Directions:

Equipment note: This recipe uses a Ninja Creami* machine. You will need one empty Creami pint along with the machine for this recipe.
  1. In a medium microwave safe bowl, warm the cream cheese for 10 seconds in the microwave. Whisk the sweetener and vanilla extract into the warm cream cheese until it reaches a thick icing texture. Stir in raspberries, mushing them up as you go, until well combined. Slowly whisk in Atkins Creamy Vanilla Shake until evenly combined. Pour into the Creami pint, cover and freeze for 24 hours.
  2. Remove frozen pint, place in a cold water bath for 5 minutes. Process using Ninja Creami on the lite ice cream setting. Serve right away, or freeze for up to 30 minutes before scooping. Two scoops (one third of the pint) are one serving.
