Ingredients:

  • 1 pound (16 ounces) ground turkey
  • 1 (10 oz) package frozen chopped spinach
  • 4 slices Atkins Low Carb Wheat Bread
  • 1 large egg
  • 3 tablespoons pesto sauce or Basil Pesto
  • 1/4 cup heavy cream
  • 1 clove garlic, minced or pressed
  • 1 teaspoon dried oregano leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread.  Toast 4 slices of bread (or use stale bread) then process in a food processor into bread crumbs.  You will also need to make Basil Pesto (you will need 3 tbsp) or store bought pesto.
  1. Heat oven to 375°F.
  2. In a large bowl, combine turkey and spinach until well blended. Mix in bread crumbs, egg, pesto, cream, minced garlic, oregano, salt and pepper. Transfer mixture to a loaf pan. Bake 45-50 minutes, until an instant read thermometer inserted in center registers 160°F.
  3. Cool 5 minutes before cutting into slices.
