Keto Turkey Cobb Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 6 cups shredded Cos or Romaine Lettuce
  • 1 fruit without skin and seed California Avocado
  • 3/4 cup, crumbled Blue or Roquefort Cheese
  • 6 medium slice (yield after cooking) Bacon
  • 16 ounces Turkey Breast Meat (Fryer-Roasters, Cooked, Roasted)
  • 2 large Boiled Eggs
  • 2 small whole (2-2/5" diameter) Red Tomatoes

Directions:

This recipe calls for the Atkins recipe for 3 oz (6 Tbsp) Italian Dressing, but you can also use any Italian dressing as long as it has no added sugar.
  1. Cook bacon in a skillet over medium-high heat till browned and crispy. Drain off excess fat, cool and then coarsely chop the bacon. 
  2. In a large bowl, toss Romaine with 3 tablespoons dressing and mound it on a large serving platter. 
  3. Arrange bacon, eggs, avocado, turkey, tomatoes and blue cheese in vertical stripes across the lettuce.
  4. Drizzle with remaining dressing and serve.
