Ingredients:
- 2 tablespoons Parsley
- 2 tablespoons Extra Virgin Olive Oil
- 8 slice, thin/smalls Red Tomatoes
- 12 ounces Tuna in Water (Canned)
- 1/3 tablespoon Red Wine Vinegar
- 2 ounces Pitted Kalamata Olives
- 1 ounce Dried Pine Nuts
Directions:
Use the Atkins recipe to make Atkins Low Carb Wheat Bread for this recipe. You will need 8 servings.
- Spread each bread slice with 1/2 tablespoon olive spread and arrange two slices of tomato on four slices.
- In a bowl, mix tuna, pine nuts, parsley, olive oil and vinegar until ingredients are very well combined. Season to taste with salt and pepper.
- Spoon one-quarter of the tuna mixture on 4 slices of bread, olive spread side up. Pat down gently with a spoon.
- Cover tuna mixture with remaining bread slices, olive spread side down. Cut sandwiches in half diagonally.
