Keto Tuna Cozumel

Ingredients:

  • 1/2 small Onion
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Parsley
  • 1 cup Red Tomato (Stewed, Canned)
  • 6 each Green Olives
  • 2 Jalapeno Peppers
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Fresh Lemon Juice
  • 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
  • 1 1/2 teaspoons Garlic
  • 24 ounces boneless, raw Tuna
  • 1 teaspoon Marjoram (Dried)

Directions:

  1. Sprinkle tuna steaks with salt and freshly ground pepper to taste; set aside.  Slice bell pepper and yellow onion into thin rounds.
  2. Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add yellow onion and bell pepper and cook 5 minutes, until lightly golden.
  3. Add garlic (minced) and cook 1 minute more. Stir in chopped olives, tomatoes, sliced jalapeños, marjoram and pepper.
  4. Simmer uncovered 15 minutes, until sauce thickens slightly. Stir in lemon juice. Transfer to a bowl.
  5. Wipe out skillet. Increase heat to medium-high. Heat remaining oil until very hot. Cook tuna steaks 2 3 minutes per side for medium-rare, or to desired degree of doneness.
  6. Pour sauce over fish; reduce heat to low. Cook 2 minutes more just to heat through. Garnish with parsley before serving.
