Tri-Color Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1/2 teaspoon Fresh Lemon Juice
  • 1 tablespoon Balsamic Vinegar
  • 3 tablespoons Extra Virgin Olive Oil
  • 3 cup, shredded or choppeds Butterhead Lettuce (Includes Boston and Bibb Types)
  • 3 cups shredded Radicchio
  • 3 cups chopped Endive

Directions:

  1. In a large bowl, combine vinegar and lemon juice. Slowly whisk in oil until dressing has slightly thickened. Season to taste with salt and pepper.
  2. Add endive, radicchio and lettuce. Toss lightly to coat. Enjoy!
