Tofu "Ricotta"

Ingredients:

  • 14 ounces Firm Silken Tofu
  • 2 ounces Mozzarella Soy Cheese
  • 1 serving Stevia
  • 1/4 teaspoon Garlic Powder
  • 1 fluid ounce Fresh Lemon Juice
  • 1/3 tablespoon Basil
  • 1/3 teaspoon Salt

Directions:

This is a great-tasting nondairy substitute for ricotta cheese to enjoy as a snack or use as an ingredient in recipes such as lasagna. Substitute it one for one in recipes.
  1. Mash together tofu, lemon juice, chopped basil, Stevia, salt, garlic powder and "mozzarella" substitute.
  2. Refrigerate for up to 5 days.
