Swiss Chard Gratin

Ingredients:

  • 2 pounds Swiss Chard
  • 3 large Eggs (Whole)
  • 3 teaspoons Italian Seasoning
  • 1/4 cup Whole Grain Soy Flour
  • 1/4 cup Tap Water
  • 3/4 cup Heavy Cream
  • 1/4 tablespoon Sour Cream (Cultured)
  • 1/4 teaspoon Black Pepper
  • 1/2 teaspoon Salt

Directions:

Use a blend of mixed fresh minced herbs such as thyme, parsley and basil for this recipe to replace the Italian seasoning if desired.
  1. Preheat oven to 375°F. Butter a shallow 1-quart baking dish.
  2. In a medium pot on high heat, cook chard in lightly salted boiling water until soft, about 3 to 5 minutes. Drain and squeeze dry (may be prepared up to one day in advance). Spread chard into baking dish in an even layer.
  3. In a medium bowl, whisk soy flour and eggs until smooth. Add cream, water, sour cream, herbs, salt and pepper.
  4. Pour mixture over chard and bake 45 minutes or until set, puffed around the edges and lightly browned.
