Summer Arugula and Strawberry Salad

Ingredients:

  • 5 ounces fresh baby arugula, organic Earthbound Farm
  • 3 ounces prosciutto FNDDS
  • 6 tablespoons olive oil USDA
  • 8 lrgs fresh strawberries Canadian Nutrient File
  • 5 ounces burrata cheese Trader Joe's
  • 12 eas fresh basil, leaf FNDDS
  • 3 tablespoons balsamic vinegar, regular, 134015 DeLallo
  • 1/2 teaspoon table salt USDA
  • 1/2 cup marcona almonds, blanched Now
  • 1/2 teaspoon black pepper, ground USDA

Directions:

  1. Arrange arugula on the bottom of a serving bowl. Top with roughly chopped burrata cheese, torn prosciutto, almonds, sliced strawberries, and roughly chopped basil.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt and pepper. Drizzle salad with dressing and serve.
