String Bean Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1 tablespoon Parsley
  • 1/8 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1/3 tablespoon chopped Shallots
  • 3/4 pound Green Snap Beans
  • 1/3 tablespoon Red Wine Vinegar
  • 1 tablespoon Extra Virgin Olive Oil

Directions:

  1. Bring a medium saucepan of salted water fitted with a steamer basket to a boil. Add beans to basket and steam for 2 minutes. Drain, rinse beans in cold water and spread out on a dish towel to cool and dry.
  2. Mix together beans, oil, vinegar, shallot, parsley, salt and black pepper. Serve at room temperature.
