Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 1 tablespoon Parsley
- 1/8 teaspoon Salt
- 1/8 teaspoon Black Pepper
- 1/3 tablespoon chopped Shallots
- 3/4 pound Green Snap Beans
- 1/3 tablespoon Red Wine Vinegar
- 1 tablespoon Extra Virgin Olive Oil
Directions:
- Bring a medium saucepan of salted water fitted with a steamer basket to a boil. Add beans to basket and steam for 2 minutes. Drain, rinse beans in cold water and spread out on a dish towel to cool and dry.
- Mix together beans, oil, vinegar, shallot, parsley, salt and black pepper. Serve at room temperature.
