INGREDIENTS

  • 0 1/4 cup Chia Seeds
  • 0 1/4 cup Hemp Hearts
  • 1 1/2 tablespoon(s) truvia sweet complete (2 tbsp= 21g)
  • 0 1/2 tsp Cinnamon, ground
  • 1 1/2 cup Almond Milk, plain, unsweetened
  • 1 tsp Vanilla extract
  • 1 cup Strawberries, fresh, sliced
  • 1 1/3 cup Greek Yogurt, plain, unsweetened, whole milk
  • 2 bar Atkins Strawberry Shortcake Bar

DIRECTIONS

  1. In a 16-ounce jar, combine chia seeds, hemp hearts, 1 tablespoon sweetener, and cinnamon. Add almond milk and vanilla, mix well, cover and refrigerate for at least 2 hours, shaking or stirring once after about 1 hour.
  2. In a small bowl, gently stir the sliced strawberries and ½ tablespoon sweetener. Refrigerate until needed, at least 10 minutes.
  3. To assemble, place ¼ cup sliced strawberries on one side of each of 4 small bowls. Add 1/3 cup Greek yogurt, and 1/3 cup of the chia pudding. Chop the bars and top each of the bowls with ½ bar.
