Keto Strawberry Rhubarb Sauce

Ingredients:

  • 16 ounces Strawberries
  • 3 cups diced Rhubarb
  • 1/4 cup Tap Water
  • 1/3 cup Xylitol

Directions:

This sauce is terrific over cheesecake or can be used to make Rhuberry Margaritas (see the Atkins recipe).
  1. In a medium sauce pan combine the rhubarb, granular sugar substitute and water. Bring to a boil, cover and cook for 5-10 minutes until softened.
  2. Add the strawberries and continue to cook covered for 5 more minutes. Cool to room temperature before using. May be refrigerated for up to 1 week or frozen for 3 months. Try freezing in ice cube trays to use for Rhuberry Margaritas or as individual serving sizes for sauces. 2 tablespoons per serving.
