Spring Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1 cucumber (8-1/4") Cucumber (with Peel)
  • 8 cups chopped Watercress
  • 2 head (5" dia) Butterhead Lettuce (Includes Boston and Bibb Types)
  • 16 medium (3/4" to 1" dia) Radishes

Directions:

Use the Atkins recipe to make Green Goddess Dressing.
  1. Tear or cut bibb and watercress lettuces into bite-sized pieces.
  2. Combine with cucumber and radish slices and toss with the dressing or any low-carb dressing of your choice.
  3. Divide on salad plates and season with freshly ground black pepper.
