Ingredients:
- 1 cucumber (8-1/4") Cucumber (with Peel)
- 8 cups chopped Watercress
- 2 head (5" dia) Butterhead Lettuce (Includes Boston and Bibb Types)
- 16 medium (3/4" to 1" dia) Radishes
Directions:
Use the Atkins recipe to make Green Goddess Dressing.
- Tear or cut bibb and watercress lettuces into bite-sized pieces.
- Combine with cucumber and radish slices and toss with the dressing or any low-carb dressing of your choice.
- Divide on salad plates and season with freshly ground black pepper.
