Keto Spinach and Shrimp Dip
Cooking tip: If you’re serving as an appetizer, plate your dip with two or three different low carb snacks!

Ingredients:

  • 1 package (10 oz) Spinach (Chopped or Leaf, Frozen)
  • 2 Jalapeno Peppers
  • 1/2 ounce Lemon Juice
  • 1/4 teaspoon Old Bay Seasoning
  • 1 clove Garlic
  • 1 medium (4-1/8" long) Scallions or Spring Onions
  • 1/2 cup Real Mayonnaise
  • 4 servings Small Cooked Shrimp
  • 6 tablespoons Cream Cheese

Directions:

  1. Thaw spinach in the microwave for 1-2 minutes.  Squeeze out excess water and place it into the bowl of a food processor.  Coarsely chop the scallions, jalapeno and garlic and add to the food processor bowl.  Process mixture until finely chopped.
  2. Add the mayonnaise, softened cream cheese, lemon juice and Old Bay seasoning.  Pulse until fully combined. 
  3. Add the shrimp and pulse just until the shrimp are finely chopped - about 10 seconds.  Taste and adjust seasonings.  Keep refrigerated until ready to serve.  This recipe makes 2 cups.  Serve with Cauliflower Fritters (see Atkins recipe) or with baked parmesan crisps or other low carb cracker.
