Cooking tip: If you’re serving as an appetizer, plate your dip with two or three different low carb snacks!
Ingredients:
- 1 package (10 oz) Spinach (Chopped or Leaf, Frozen)
- 2 Jalapeno Peppers
- 1/2 ounce Lemon Juice
- 1/4 teaspoon Old Bay Seasoning
- 1 clove Garlic
- 1 medium (4-1/8" long) Scallions or Spring Onions
- 1/2 cup Real Mayonnaise
- 4 servings Small Cooked Shrimp
- 6 tablespoons Cream Cheese
Directions:
- Thaw spinach in the microwave for 1-2 minutes. Squeeze out excess water and place it into the bowl of a food processor. Coarsely chop the scallions, jalapeno and garlic and add to the food processor bowl. Process mixture until finely chopped.
- Add the mayonnaise, softened cream cheese, lemon juice and Old Bay seasoning. Pulse until fully combined.
- Add the shrimp and pulse just until the shrimp are finely chopped - about 10 seconds. Taste and adjust seasonings. Keep refrigerated until ready to serve. This recipe makes 2 cups. Serve with Cauliflower Fritters (see Atkins recipe) or with baked parmesan crisps or other low carb cracker.
