Ingredients:
- 2 tablespoons Butter
- 4 large whole (3" diameter) Tomatoes
- 2 tablespoons drained Capers
- 1 tablespoon Light Olive Oil
- 3 teaspoons leaves Oregano
- 6 ounces Green String Beans
- 24 ounces boneless, cooked Chicken Breast
- 2 Jalapeno Peppers
Directions:
- Season chicken with salt and pepper. Heat oil in a large skillet over high heat and sauté chicken until golden brown, about 3 minutes per side.
- Add tomatoes, jalapenos and capers to skillet. Reduce heat to medium low; cover and simmer until chicken is just cooked through, about 8 minutes.
- Stir in fresh minced oregano just before serving.
