Spicy Keto Tomato-Jalapeno Chicken Breasts

Ingredients:

  • 2 tablespoons Butter
  • 4 large whole (3" diameter) Tomatoes
  • 2 tablespoons drained Capers
  • 1 tablespoon Light Olive Oil
  • 3 teaspoons leaves Oregano
  • 6 ounces Green String Beans
  • 24 ounces boneless, cooked Chicken Breast
  • 2 Jalapeno Peppers

Directions:

  1. Season chicken with salt and pepper. Heat oil in a large skillet over high heat and sauté chicken until golden brown, about 3 minutes per side.
  2. Add tomatoes, jalapenos and capers to skillet. Reduce heat to medium low; cover and simmer until chicken is just cooked through, about 8 minutes.
  3. Stir in fresh minced oregano just before serving.
