Ingredients:
- 1 cup Spaghetti Squash, baked or steamed
Directions:
Use the Atkins recipe: Romesco Sauce for this recipe.
- Heat oven to 400°F.
- Prick squash in several places. Bake 45 minutes until tender. Allow to cool slightly, cut in half and scoop out and discard seeds. Pull out squash strands from each side with a fork.
- Transfer to a bowl; cool to room temperature. Alternatively, you can cook the squash in the microwave. Place cut side down on a plate with 1/4 cup water. Cook on high for 7-10 minutes.
- While squash is cooking make Romesco Sauce.
- Toss cooked spaghetti squash with 3 tablespoons Romesco Sauce.
