Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 2 cups shredded Cos or Romaine Lettuce
- 1 cup shredded Swiss Cheese
- 1/2 pepper, large (3-3/4" long, 3" dia) Yellow Sweet Peppers
- 2 teaspoons Extra Virgin Olive Oil
- 1/2 pound Swordfish
- 1/4 pound Shrimp
- 1/4 pound Scallop (Mixed Species)
- 2 fluid ounces Fresh Lime Juice
- 1 15 oz can Black Soybeans
Directions:
Use the Atkins recipe to make Garlic Ranch Dressing.
- Place seafood on a large plate and drizzle with 2 tablespoons lime juice.
- Add oil to a large nonstick skillet over medium-high heat. Add swordfish and sauté until partially cooked, about 2 minutes. Add scallops and shrimp and sauté until seafood is lightly browned and just cooked through, about 4 minutes Transfer to a plate to cool.
- Mix remaining lime juice, 1/2 cup Garlic Ranch Dressing and jalapeno (optional). Add seafood, lettuce, cheese, soybeans and bell pepper.
- Toss gently to coat. Serve with low carb tortillas, if desired.
