Keto Snapper Vera Cruz
Cooking tip: Add additional cilantro to this dish to make it pop with freshness!

Ingredients:

  • 1/4 cup Extra Virgin Olive Oil
  • 2 ounces Green Chili Peppers (Canned)
  • 1 medium (2-1/2" diameter) Onions
  • 2 cloves Garlic
  • 1 cup Diced Tomato
  • 2 pounds Snapper (Fish) (Mixed Species)
  • 1/8 cup Cilantro (Coriander)
  • 2 tablespoons drained Capers
  • 2/3 10 large Stuffed Green Olife

Directions:

  1. Heat oven to 400°F. Heat oil in a large nonstick skillet over medium heat. Cook diced white onion 5 minutes, until softened.
  2. Add minced garlic and cook 1 minute more. Stir in tomatoes, diced chiles, and 1 tbsp cilantro. Cook 10 minutes, until mixture thickens slightly.
  3. Arrange snapper fillets in a 9 x 13 baking dish. Sprinkle with salt and pepper. Spoon sauce evenly over fish. Top with capers and 6 large olives, sliced.  Cover with foil.
  4. Bake 20 minutes, just until fish is cooked through. Garnish with left over chopped cilantro (about 1 tbsp).
