Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 3 ounces Gorgonzola Cheese
- 1 clove Garlic
- 3 ounces Grated Romano Cheese
- 1/4 teaspoon Salt
- 1/3 cup Extra Virgin Olive Oil
- 1/4 cup Fresh Lemon Juice
- 1/3 cup Parsley
- 16 ounces Butterhead Lettuce (Includes Boston and Bibb Types)
- 2 tablespoons Red Wine Vinegar
Directions:
- Crumble and combine cheeses in a mixing bowl. Cover and refrigerate cheeses while you assemble the rest of the salad.
- Separate lettuce leaves from the head. Rinse, spin-dry and tear into 3-inch pieces.
- Whisk together oil, chopped parsley, lemon juice, vinegar, salt and minced garlic in a large mixing bowl. Add lettuce and cheeses, toss to combine and serve.
