Keto Sensation Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 3 ounces Gorgonzola Cheese
  • 1 clove Garlic
  • 3 ounces Grated Romano Cheese
  • 1/4 teaspoon Salt
  • 1/3 cup Extra Virgin Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 1/3 cup Parsley
  • 16 ounces Butterhead Lettuce (Includes Boston and Bibb Types)
  • 2 tablespoons Red Wine Vinegar

Directions:

  1. Crumble and combine cheeses in a mixing bowl.  Cover and refrigerate cheeses while you assemble the rest of the salad.
  2. Separate lettuce leaves from the head.  Rinse, spin-dry and tear into 3-inch pieces.
  3. Whisk together oil, chopped parsley, lemon juice, vinegar, salt and minced garlic in a large mixing bowl. Add lettuce and cheeses, toss to combine and serve.
