Sautéed Green and Yellow Squash with Fresh Mint Recipe

1 small Red Onions
3 medium Zucchini
0 1/2 tsp Garlic
0 1/8 tsp Crushed Red Pepper Flakes
5 tablespoon(s) Peppermint, fresh (1 tbsp= 1.6 g)
1 fl oz Fresh Lemon Juice
- Cook diced onion with olive oil in a skillet over medium-low heat till softened. Cut zucchini into round disks.
- Increase heat to medium-high and add zucchini, minced garlic and red pepper flakes. Season with salt and freshly ground black pepper.
- Drizzle with lemon juice and top with julienned mint.
