Sautéed Green and Yellow Squash with Fresh Mint

Ingredients:

  • 1/2 teaspoon Garlic
  • 1 fluid ounce Fresh Lemon Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 3 medium Zucchinis
  • 1 small Red Onion
  • 5 tablespoon(s) Peppermint, fresh (1 tbsp= 1.6 g)
  • 1/8 teaspoon Crushed Red Pepper Flakes

Directions:

  1. Cook diced onion with olive oil in a skillet over medium-low heat till softened.  Cut zucchini into round disks.
  2. Increase heat to medium-high and add zucchini, minced garlic and red pepper flakes.  Season with salt and freshly ground black pepper.
  3. Drizzle with lemon juice and top with julienned mint.
