Sautéed Chicken Sausages with Red Bell Peppers

Ingredients:

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 tsp, ground Thyme (Dried)
  • 1 cup Parsley
  • 1 small Red Onion
  • 1 1/2 teaspoons Garlic
  • 8 links Original Bratwurst Chicken Sausage
  • 1/8 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Sweet Red Peppers

Directions:

  1. Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Add 24 ounces of chicken bratwursts (about 8 links if 3.2 ounces each) and brown on all sides, turning frequently, about 5 minutes.  Slice onions and bell peppers.  Mince the garlic.
  2. Meanwhile, heat remaining 2 tablespoons oil in a medium skillet over medium-low heat. Add onion and cook, stirring occasionally for 5 - 6 minutes until soft. Add thyme and minced garlic and cook 1 minute more. Stir in bell pepper and cook 10 minutes, stirring occasionally, until peppers just begin to soften. 
  3. Add onion and pepper mixture to sausages; add chopped parsley and salt and black pepper. Cook 10 minutes more.
