Ingredients:
- 1 cup Salsa
- 1/2 cup shredded Monterey Jack Cheese
- 1 1/2 pounds Grouper (Fish) (Mixed Species)
- 1 tablespoon Light Olive Oil
- 1/2 cup Roasted Salted Hulled Pumpkin and/or Squash Seeds
Directions:
This recipe is acceptable for all phase except the first 2 weeks of Induction doe to the pumpkin seeds.
- Heat oven to 400°F.
- Spread olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish. Bake fish 8 minutes.
- Spread cheese evenly over top. Bake 2-3 minutes more, until cheese is bubbly.
- Sprinkle with pumpkin seeds before serving.
