Keto Salsa-Baked Fish

Ingredients:

  • 1 cup Salsa
  • 1/2 cup shredded Monterey Jack Cheese
  • 1 1/2 pounds Grouper (Fish) (Mixed Species)
  • 1 tablespoon Light Olive Oil
  • 1/2 cup Roasted Salted Hulled Pumpkin and/or Squash Seeds

Directions:

This recipe is acceptable for all phase except the first 2 weeks of Induction doe to the pumpkin seeds. 
  1. Heat oven to 400°F.
  2. Spread olive oil in a shallow baking pan. Arrange fillets in a single layer. Spoon salsa over fish. Bake fish 8 minutes.
  3. Spread cheese evenly over top. Bake 2-3 minutes more, until cheese is bubbly.
  4. Sprinkle with pumpkin seeds before serving.
