INGREDIENTS

  • 0 1/4 cup, whole or halves Macadamia Nuts
  • 0 1/4 cup Cilantro (Coriander)
  • 4 tablespoon Unsalted Butter Stick
  • 1 tsp Lemon Zest
  • 24 oz, boneless, raw Salmon
  • 0 1/2 fl oz Fresh Lemon Juice

DIRECTIONS

Please note this recipe is acceptable for all phases except the first two weeks of Induction due to the nuts.
 
  1. Heat oven to 450°F.
  2. In a food processor, process macadamia nuts and cilantro until finely chopped.  Add 3 tablespoons of the butter and lemon zest, pulse until combined.
  3. Grease a jellyroll pan with remaining tablespoon of butter. Place salmon in pan flesh side up. Season with salt and pepper. Rub macadamia-cilantro butter over fish.
  4. Roast 12 to 15 minutes for medium-rare. Transfer to serving place and drizzle with lemon juice.
