Keto Roasted Salmon with Macadamia-Cilantro Crust Recipe

0 1/4 cup, whole or halves Macadamia Nuts
0 1/4 cup Cilantro (Coriander)
4 tablespoon Unsalted Butter Stick
1 tsp Lemon Zest
24 oz, boneless, raw Salmon
0 1/2 fl oz Fresh Lemon Juice
DIRECTIONSPlease note this recipe is acceptable for all phases except the first two weeks of Induction due to the nuts.
- Heat oven to 450°F.
- In a food processor, process macadamia nuts and cilantro until finely chopped. Add 3 tablespoons of the butter and lemon zest, pulse until combined.
- Grease a jellyroll pan with remaining tablespoon of butter. Place salmon in pan flesh side up. Season with salt and pepper. Rub macadamia-cilantro butter over fish.
- Roast 12 to 15 minutes for medium-rare. Transfer to serving place and drizzle with lemon juice.
