Roasted Fennel and Onions with Raita Recipe

1 tsp Extra Virgin Olive Oil
0 3/4 cup, sliced Fennel Bulk
1 small Red Onions
Use 1/4 cup of the Atkins recipe for Raita as part of this dish, you will need 1/4 cup.
- Preheat oven to 425°F.
- Mist fennel and onions with olive oil spray or brush with a little olive oil.
- Roast for 10 minutes. Turn temperature down to 350°F and cook until tender and beginning to brown, about 10 more minutes. Season with salt and freshly ground black pepper to taste.
- Toss with Raita or serve it on the side.
