Roasted Fennel and Onions with Raita

Ingredients:

  • 1 small Red Onion
  • 1 teaspoon Extra Virgin Olive Oil
  • 3/4 cup sliced Fennel Bulk

Directions:

Use 1/4 cup of the Atkins recipe for Raita as part of this dish, you will need 1/4 cup. 
  1. Preheat oven to 425°F.
  2. Mist fennel and onions with olive oil spray or brush with a little olive oil.
  3. Roast for 10 minutes. Turn temperature down to 350°F and cook until tender and beginning to brown, about 10 more minutes. Season with salt and freshly ground black pepper to taste.
  4. Toss with Raita or serve it on the side.
