INGREDIENTS

  • 3 large (1" to 1-1/4" dia) Radishes
  • 1/4 cup, chopped Red Sweet Pepper
  • 2 cup, shredded or chopped Mixed Salad Greens
  • 5 oz Beef Bottom Sirloin (Tri-Tip Roast, Trimmed to 0" Fat)
  • 1 serving Garlic Ranch Dressing

DIRECTIONS

Use the Atkins recipe to make Garlic Ranch Dressing; you will need 2 tablespoons.  If not using this reicpe, be sure to use a dressing that is 2g NC or less. 
 
  1. Slice or quarter the radishes and chop the red bell pepper then combine with the greens and dressing; toss to coat.
  2. Top with roast beef and serve immediately.

Cooking Tip

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
