Red Lettuce Salad with Peaches

Ingredients:

  • 2 1/4 cups fresh red boston lettuce, medium, leaf FNDDS
  • 1/2 cup fresh red bell pepper, sliced Canadian Nutrient File
  • 1/4 sml fresh red onion, mature FNDDS
  • 4 lrgs fresh radishes USDA
  • 2 teaspoons balsamic vinegar, regular, 134015 DeLallo
  • 2 tablespoons olive oil USDA
  • 6 eas fresh cherry tomatoes FNDDS
  • 1/4 teaspoon table salt USDA
  • 1 sml fresh peaches USDA
  • 1/4 teaspoon black pepper, ground USDA
  • 6 drops liquid stevia sweetener FNDDS

Directions:

  1. In a medium bowl, combine lettuce, onion, halved grape tomatoes, radish slices and sliced peach.
  2. In a small jar with a tight-fitting lid, shake to combine olive oil, vinegar, salt, pepper and stevia. Pour over the salad and toss to coat. Portion into two equal amounts and serve.
