Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 3 tablespoons Extra Virgin Olive Oil
- 2 medium slice (yield after cooking) Bacon
- 1 head (5" dia) Butterhead Lettuce (Includes Boston and Bibb Types)
- 1/2 pound Radicchio
- 2 tablespoons Parsley
- 2 ounces Gorgonzola Cheese
- 1 tablespoon Fresh Lemon Juice
Directions:
- Cook bacon until crisp; transfer to a paper towel to drain. Crumble bacon; set aside.
- In a large bowl whisk together olive oil, lemon juice, and salt and pepper to taste. Add gently torn Boston lettuce, radicchio, cheese and parsley.
- Toss gently to coat. Transfer to plates; sprinkle with bacon.
