Radicchio, Gorgonzola and Bacon Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 3 tablespoons Extra Virgin Olive Oil
  • 2 medium slice (yield after cooking) Bacon
  • 1 head (5" dia) Butterhead Lettuce (Includes Boston and Bibb Types)
  • 1/2 pound Radicchio
  • 2 tablespoons Parsley
  • 2 ounces Gorgonzola Cheese
  • 1 tablespoon Fresh Lemon Juice

Directions:

  1. Cook bacon until crisp; transfer to a paper towel to drain. Crumble bacon; set aside.
  2. In a large bowl whisk together olive oil, lemon juice, and salt and pepper to taste. Add gently torn Boston lettuce, radicchio, cheese and parsley.
  3. Toss gently to coat. Transfer to plates; sprinkle with bacon.
