Quick & Fresh Tomato Salsa
Cooking tip: Push the back of a spoon against the lime rind to squeeze as much lime juice out as possible.

Ingredients:

  • 1 tablespoon chopped Onions
  • 1/2 clove Garlic, raw
  • 1 medium whole (2-3/5" diameter) Tomato
  • 1/8 teaspoon Cumin
  • 1 sprig Cilantro
  • 1/2 tablespoon Lime Juice

Directions:

Dice the tomatoes, finely dice the onion, cilantro, and garlic.  Combine all in a small bowl with the cumin, lime juice, salt and freshly ground black pepper to taste.
Variation: For some added spice, add 6 sliced pickled jalapenos and dice with the onion, garlic and cilantro.
