6 oz, boneless Prosciutto

1 1/2 tablespoon Extra Virgin Olive Oil

2 tsp Lemon Zest

1 tsp Fresh Lemon Juice

0 1/4 tsp Salt

0 1/8 tsp Black Pepper
DIRECTIONS
- Bring a large pot of lightly salted water to a boil. Add asparagus and cook until crisp-tender, 2 to 3 minutes. Drain and transfer to a bowl filled with ice water, cool about 2 minutes, then pat dry.
- Wrap each asparagus spear with one piece of prosciutto. Place lengthwise on a serving tray.
- Juice and zest the lemon. Combine oil, zest, lemon juice, salt and pepper in a bowl; mix well. Coat wrapped spears with dressing. Serve immediately.
