Pico de Gallo

Ingredients:

  • 1 tablespoon Fresh Lemon Juice
  • 1 Jalapeno Pepper
  • 1 fruit without skin and seed California Avocado
  • 1/8 cup Cilantro (Coriander)
  • 1 medium whole (2-3/5" diameter) Red Tomato
  • 1 tablespoon Canola Vegetable Oil
  • 3 medium (4-1/8" long) Scallions or Spring Onions

Directions:

  1. In a small bowl, dice and then combine the avocado, tomato, onions and jalapeno.  Mince the cilantro and add along with the juice, and oil. Blend to combine and season with salt and pepper to taste.
  2. Refrigerate 1 hour for flavors to blend.
