Ingredients:
- 1/8 pinch Stevia
- 6 tablespoons Virgin Coconut Oil
- 2 tablespoons Erythritol
- 10 tablespoons Unsalted Butter Stick
- 1/4 tablespoon Cocoa Powder
- 1/16 teaspoon Salt
- 6 pieces Starlight Mints, sugar-free
Directions:
- Combine room temperature butter and coconut oil in a small microwave safe bowl. Heat at 10 second intervals until slightly melted.
- Whisk in the confectioners sugar substitute, cocoa powder, peppermint extract, stevia, and a pinch of salt (optional). Whisk until all ingredients are incorporated.
- Line a loaf pan with wax paper so it goes up the sides about 1 inch. Pour mixture into pan, and place in the refrigerator. Crush peppermint stars by placing in a plastic bag and hitting with a hammer until crushed, then sprinkle crushed candies over the top and place back in the refrigerator for at least 30 minutes or until hardened. Once cold and fully set cut into 8 squares. Alternatively, roll up into 8 equal balls once chilled then roll in the candies.
