"Pasta" Salad with Pesto and Zucchini Ribbons

Ingredients:

  • 10 each Cherry or Grape Tomato
  • 1/4 cup Red Onion (chopped)
  • 1/4 cup Red Bell Pepper (chopped)
  • 1/4 cup, crumbled Feta Cheese
  • 16 each Kalamata Olives
  • 2 cups zucchini noodles
  • 1/4 cup Green Bell Pepper (chopped)

Directions:

  1. Ingredient notes: You will need ¼ cup of Atkins recipe for basil pesto, or you can use a premade pesto with no more than 2 net carbs for ¼ cup. We suggest using 2-inch long zucchini ribbons, or wavy ribbons, for this recipe. Optionally, sprinkle with 2 tablespoons pine nuts for an extra 0.4 net carbs per serving.Fold together all ingredients in a medium bowl until evenly distributed and coated with pesto.
Kid friendly variation: Use 16 large black olives and 1-ounce mozzarella cheese instead of the Kalamata olives and feta cheese, and subtract 0.7 Net Carbs per serving.
