Keto Panna Cotta
Cooking tip: Make sure gelatin is completely dissolved before adding into cream mixture.

Ingredients:

  • 1 teaspoon Vanilla Extract
  • 1 package (1 oz) Gelatin Powder (Unsweetened)
  • 8 individual packets Sucralose Based Sweetener (Sugar Substitute)
  • 2 cups Heavy Cream

Directions:

  1. Lightly oil six 6-ounce custard cups. In small bowl sprinkle gelatin over 3 tablespoons cold water, let sit 5 minutes until softened.
  2. Meanwhile, in medium saucepan combine heavy cream, 1/2 cup water, sugar substitute and scrapped out vanilla bean seeds or use vanilla extract. Bring to a boil over medium heat.
  3. Remove from heat, add gelatin mixture; stir until melted. Pour mixture into prepared cups. Cover surface with plastic wrap to prevent skin from forming. Refrigerate at least 3 hours.
  4. Turn out onto serving plates.
