Pancetta-Flavored Braised Cabbage

Ingredients:

  • 1/2 cup chopped Onions
  • 1/3 tablespoon White Wine Vinegar
  • 1/2 cup sliced Fennel Bulk
  • 4 cups chopped Cabbage
  • 1 1/2 ounces Pancetta
  • 1 tablespoon Light Olive Oil
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1/4 cup Chicken Broth, Bouillon or Consomme

Directions:

  1. In a large skillet over medium-high heat, cook pancetta 3 to 4 minutes, until browned and crisp. Transfer to a plate and when cool cut into small pieces; set aside.
  2. Slice the onion, fennel and core and slice the cabbage; set aside.  Add oil to the skillet over medium-high heat.  Add the onion and fennel cooking for 3 minutes, until lightly browned. Add sliced cabbage, broth, salt and crushed red pepper.
  3. Reduce heat to medium; cover and cook until tender, 18 to 20 minutes.
  4. Stir in vinegar and pancetta.  Serve immediately.
