Olive-Egg Salad Tortillas

Ingredients:

  • 4 tortillas Low Carb Tortillas
  • 6 large Boiled Eggs
  • 1 ounce Black Olives
  • 1/8 teaspoon Crushed Red Pepper Flakes
  • 1 cup Arugula (Rocket)
  • 1/4 cup Real Mayonnaise
  • 1 tablespoon chopped Sun-Dried Tomato
  • 2 tablespoons Extra Virgin Olive Oil

Directions:

  1. Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and 1/8 tsp red-pepper flakes. Season to taste with salt and pepper.
  2. Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a border. Top with 1 cup arugula leaves.
  3. Roll up tortillas. Enjoy!
