Ingredients:
- 4 tortillas Low Carb Tortillas
- 6 large Boiled Eggs
- 1 ounce Black Olives
- 1/8 teaspoon Crushed Red Pepper Flakes
- 1 cup Arugula (Rocket)
- 1/4 cup Real Mayonnaise
- 1 tablespoon chopped Sun-Dried Tomato
- 2 tablespoons Extra Virgin Olive Oil
Directions:
- Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and 1/8 tsp red-pepper flakes. Season to taste with salt and pepper.
- Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a border. Top with 1 cup arugula leaves.
- Roll up tortillas. Enjoy!
