INGREDIENTS

  • 1 cup Arugula (Rocket)
  • 0 1/4 cup REAL MAYONNAISE Unilever Bestfoods North America
  • 1 Tbsp chopped SUN-DRIED TOMATOES Great Lakes International Trading, Inc.
  • 6 large Boiled Egg
  • 0 1/8 tsp Crushed Red Pepper Flakes
  • 1 oz BLACK OLIVES Cortas Canning & Refrigerating
  • 2 tablespoon EXTRA VIRGIN OLIVE OIL Salov North America Corp.
  • 4 tortilla LOW CARB TORTILLAS FIT & ACTIVE

DIRECTIONS

  1. Mix eggs, mayonnaise, olive oil, black olives, sun-dried tomatoes and 1/8 tsp red-pepper flakes. Season to taste with salt and pepper.
  2. Warm tortillas between damp paper towels in microwave. Spread egg mixture on tortillas, leaving a border. Top with 1 cup arugula leaves.
  3. Roll up tortillas. Enjoy!
