Mushroom Scramble

Ingredients:

  • 8 Cherry Tomatoes
  • 14 ounces Firm Silken Tofu
  • 1/4 cup shredded Cheddar Cheese
  • 1/2 cup chopped Onions
  • 4 large Eggs (Whole)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 cup Mushroom Pieces and Stems
  • 1 cup Baby Spinach
  • 3 tablespoons Parmesan Cheese (Grated)
  • 1/8 teaspoon leaf Dried Thyme Leaves

Directions:

  1. In a large nonstick skillet, over medium-high heat, cook the white onion and mushrooms in the oil until soft (about 3 minutes).
  2. Add the tofu and spinach and cook an additional 3 minutes.
  3. Stir in the tomatoes, eggs, Cheddar and Parmesan cheeses and 1/8 tsp thyme and cook until the egg is firm. 
  4. Serve immediately.
