Monte Cristo Sandwiches

Ingredients:

  • 1/2 teaspoon Salt
  • 1/4 cup Unsalted Butter Stick
  • 8 ounces boneless, cooked Fresh Ham
  • 8 slice (1 ounce) Swiss Cheese
  • 3 tablespoons Tap Water
  • 1/3 cup Heavy Cream
  • 4 teaspoons Dijon Mustard
  • 8 ounces boneless, cooked Roasted Light Turkey Meat
  • 4 large Eggs (Whole)

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread.  You will need 8 servings.  This sandwich would be delicious with Rye bread, so try to find a low carb Rye bread to enjoy the sandwich!
  1. Spread 4 slices of bread with mustard. Divide ham, cheese, and turkey slices over bread. Top with remaining bread slices and press down to flatten slightly.
  2. Mix eggs, cream, water and salt in a shallow bowl. Melt butter on a griddle or in 2 skillets over medium heat. Dip each sandwich into batter, coating well.
  3. Cook sandwiches 3-4 minutes per side until golden brown. Press down lightly with a spatula once or twice during cooking time to melt the cheese. Enjoy!
