Ingredients:

  • 1 tablespoon Peppermint (Mint)
  • 1/2 fluid ounce Fresh Lime Juice
  • 2 servings Sweetener
  • 4 fluid ounces Club Soda
  • 4 cup ice cubes Tap Water
  • 1 fluid ounce (no ice) Rum

Directions:

This recipe can be made nonalcoholic by leaving the rum out.  For rum flavor 1/2 tsp rum extract may be added.  For the best taste use Truvia as the sweetener.
  1. In a large glass using a cocktail muddle with a long handle and flat rough surface, crush the mint leaves, lime juice, and granular sugar substitute (if using sucralose use 4 tsp and add 2g NC to the total).  
  2. Add the rum and soda water.  Mix to combine and pour over ice.
