Mashed Autumn Vegetables with Bacon and Scallions

Ingredients:

  • 1 1/2 pounds Turnips
  • 4 medium slice (yield after cooking) Bacon
  • 1 tablespoon Unsalted Butter Stick
  • 1/4 teaspoon Black Pepper
  • 3 sweetpotato, 5" longs Sweetpotato, fresh
  • 1/8 teaspoon Cinnamon
  • 1/8 teaspoon Salt
  • 2 small (3" long) Scallions or Spring Onions

Directions:

  1. Put turnips and sweet potatoes in a large saucepan fitted with steamer basket with just enough water to clear the bottom of the basket. Cover and bring to a boil over high heat. Reduce heat to medium-low and steam vegetables until very tender, 10-12 minutes.
  2. Meanwhile, cook bacon in a medium skillet over medium heat until crisp. Drain on paper towels and coarsely crumble. Reserve drippings.
  3. Drain vegetables and return to saucepan. Beat with an electric mixer or mash with a potato masher until fairly smooth. Add butter and bacon drippings. Stir in cinnamon, salt and pepper.
  4. Spoon into a serving dish and top with diced scallions and crumbled bacon.
