Keto Manhattan-Style Creamed Spinach

Ingredients:

  • 1 tablespoon Unsalted Butter Stick
  • 1/2 cup Chicken Broth, Bouillon or Consomme
  • 1/2 cup Heavy Cream
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 medium (4-1/8" long) Scallions or Spring Onions
  • 1/8 teaspoon Nutmeg (Ground)
  • 1/2 small Onion
  • 2 10 oz packages Frozen Chopped Spinach

Directions:

  1. In a medium skillet, melt butter over low heat. Cook dice onion and diced green onions 5 minutes, until softened.
  2. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.
  3. Chop thawed spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.
