INGREDIENTS

  • 24 oz, boneless, raw Mahi Mahi
  • 1 tbsp Fresh Lemon Juice
  • 0 1/8 tsp Salt
  • 0 1/8 tsp Black Pepper
  • 1 tablespoon Unsalted Butter Stick
  • 0 1/2 cup, sliced Onions
  • 0 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  • 0 1/2 medium (approx 2-3/4" long, 2-1/2" dia) Green Sweet Pepper
  • 0 1/2 cup Red Tomatoes (Stewed, Canned)
  • 0 1/2 oz Cilantro (Coriander)
  • 0 1/8 tsp Tabasco
  • 1 tablespoon Extra Virgin Olive Oil

DIRECTIONS

  1. Sprinkle fish with lemon juice, salt and pepper; set aside.
  2. In a saucepan over medium-high heat, melt butter. Sauté onions and diced peppers until slightly softened, about 2 minutes. Add tomatoes, reduce heat to medium and simmer until sauce thickens, about 8 minutes.
  3. Stir in 1 tbsp cilantro and 1/8 tsp hot pepper sauce. Set aside.
  4. Heat oil in large nonstick skillet over high heat. Sauté fish until just cooked through, about 3 minutes per side.
  5. Spoon sauce over fish before serving.
