Ingredients:
- 1/8 teaspoon Salt
- 1/8 teaspoon Black Pepper
- 1/2 cup sliced Onions
- 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
- 1 tablespoon Extra Virgin Olive Oil
- 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Sweet Red Peppers
- 1/2 ounce Cilantro (Coriander)
- 1 tablespoon Unsalted Butter Stick
- 1/2 cup Red Tomatoes (Stewed, Canned)
- 1 tablespoon Fresh Lemon Juice
- 1/8 teaspoon Tabasco
- 24 ounces boneless, raw Mahi Mahi
Directions:
- Sprinkle fish with lemon juice, salt and pepper; set aside.
- In a saucepan over medium-high heat, melt butter. Sauté onions and diced peppers until slightly softened, about 2 minutes. Add tomatoes, reduce heat to medium and simmer until sauce thickens, about 8 minutes.
- Stir in 1 tbsp cilantro and 1/8 tsp hot pepper sauce. Set aside.
- Heat oil in large nonstick skillet over high heat. Sauté fish until just cooked through, about 3 minutes per side.
- Spoon sauce over fish before serving.
