Cooking tip: Coconut milk ice cubes take this delicious summer sipper to a distinctly tropical place. Any size or shape ice cube tray will work for this drink, slowly infusing the cocktail with more coconut flavor as they melt.

Ingredients:

  • 3 fluid ounces boxed unsweetened coconut milk, divided
  • 1 fluid ounce fresh squeezed pink grapefruit juice
  • 1/2 fluid ounce fresh lime juice
  • 1/2 fluid ounce silver tequila
  • 1/8 teaspoon liquid stevia extract
  • 6 fluid ounces unsweetened grapefruit flavored sparkling water
  • 1 thin slice red grapefruit, for garnish

Directions:

  1. Make the coconut milk ice cubes. Pour 2 fluid ounces of coconut milk into an ice cube tray, cover and freeze until solid, at least 4 hours.
  2. In a cocktail shaker with about 1 cup ice, shake together remaining 1 ounce coconut milk, grapefruit juice, lime juice, tequila, and stevia until the outside of the shaker is frosty. Strain into a rocks glass with the coconut milk ice cubes. Fill with grapefruit flavored sparkling water and garnish with a thin slice of grapefruit (if desired).
