Ingredients:
- 20 fluid ounces sparkling water FNDDS
- 22 drops liquid stevia sweetener FNDDS
- 7 1/2 fluid ounces vodka FNDDS
- 2 tablespoons lime juice, 100%, fresh squeezed FNDDS
- 1 gram fresh peppermint USDA
- 1 1/2 cups fresh raspberries USDA
Directions:
- In a blender, puree raspberries (holding one per serving aside for garnish), lime juice and stevia. Portion 1 tablespoon of puree in the wells of an ice cube tray and freeze for at least 4 hours or until solid.
- In the bottom of a 8-ounce glass, muddle 4 mint leaves with the back of a wooden spoon. Add 3 frozen raspberry puree cubes, 1 1/2 ounces vodka, and ice cubes to fill the glass. Pour sparkling water over the top to fill (about ½ cup) and garnish with reserved raspberry and mint leaf. Repeat for each serving.
