Ingredients:

  • 1/4 cup fresh scallions, tops & bulb USDA
  • 3 tablespoons fresh parsley, chopped USDA
  • 1/2 cup cottage cheese FNDDS
  • 1 1/2 teaspoons lime juice, unsweetened USDA
  • 1 1/4 teaspoons fresh garlic FNDDS
  • 1 ea fresh avocado USDA
  • 1/8 teaspoon black pepper, ground USDA
  • 2 tablespoons butter, unsalted USDA
  • 1/8 teaspoon table salt USDA
  • 8 ounces fresh mushrooms FNDDS
  • 1 teaspoon tamari soy sauce USDA
  • 6 slices keto bread, Oroweat
  • 1 teaspoon balsamic vinegar, regular, 134015 DeLallo

Directions:

  1. In a food processor, combine avocado and cottage cheese until smooth. Add scallions, 2 tablespoons chopped parsley, lime juice, ¼ teaspoon minced or pressed fresh garlic, salt and pepper. Process, scraping down sides as needed, until very well combined and creamy.
  2. In a large skillet over medium heat, melt the butter. Add sliced mushrooms and sauté, stirring occasionally, until the mushrooms release their moisture and most has evaporated off, about 5 minutes. Add remaining 1 teaspoon minced or pressed garlic, tamari, and balsamic vinegar, sautéing and stirring frequently until most of the liquid has evaporated, about 5 minutes more. Toss with remaining 1 tablespoon chopped parsley.
  3. Toast bread and top each slice evenly with avocado-cottage cheese mix, about 3 tablespoons on each. Arrange mushrooms evenly over avocado layer, about 12 slices on each piece of toast. One serving is two topped toasts as described.
