Cooking tip: Bringing through flavors of peanuts and featuring brightly colored candies, this frozen treat is perfect all summer long. For this recipe, look for a whey protein powder with 2 net carbs and 19 grams protein per scoop.

Ingredients:

  • 2 cups unsweetened coconut milk
  • 1/2 avocado (100g)
  • 1 scoop vanilla whey protein powder
  • 3 tablespoons erythritol-stevia sweetener
  • 2 tablespoons no sugar added creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 Atkins Milk Chocolate Caramel Squares
  • 2 packets Atkins Chocolate Peanut Candies

Directions:

  1. In a blender, combine coconut milk, avocado, protein powder, sweetener, peanut butter and vanilla on high until fully combined and creamy. Taste and add sweetener if needed. Pour into small ice cube trays, cover and freeze until solid, at least 4 hours.
  2. Using a food processor with the grating attachment, grate the smoothie cubes to create fluffy shredded ice and distribute evenly between two bowls. Top each bowl with two milk chocolate caramel squares and one packet chocolate peanut butter candies and serve while cold.
